Fresh Blackberries or a mix of seasonal berries.  A mixture of four cups blackberries and two cups raspberries is good.

Procedure

  1. Preheat oven to 400 degrees.
  2. Place berries in 2-quart ovenproof dish.  Mix sugar, flour, and cornstarch together and sprinkle over berries.  Gently stir to coat berries.
  3. Stir together flour and baking powder in a medium bowl
  4. With finger, rub in butter until flour mixture has consistency of cornmeal
  5. Pour cream into large bowl.  Sprinkle flour mixture over cream.
  6. Stir with fork until soft dough forms.
  7. Turn dough out on floured board and knead several times before rolling out to form a 9-inch circle.
  8. Place dough on top of berries, brush with cream, and sprinkle with a little granulated sugar
  9. Bake 20-30 minutes or until crust is golden brown.
